Easy Tomato Sauce

Ingredients:

  • 4 tablespoons olive oil

  • 1 onion

  • 3 tomatoes

  • 1 tablespoon tomato puree

  • salt and pepper to taste


Directions:

  1. Chop up the tomatoes and onions.

  2. in a large skilled over medium heat, cook onion in olive oil until translucent. Stir in tomatoes, cook until juice begins to thicken.

  3. Stir in puree, salt and pepper.

  4. Reduce heat and simmer 15 minutes, more until rich and thick.

  5. Let cool for 10 minutes

  6. Puree the sauce in a blender until smooth.
